When it comes to the Las Vegas dining scene, it’s hard to stand out in a sea of fast-paced intensity. Our strategy? Halt the hustle, ditch the kitsch and serve something of substance.
A seasoned group of restaurant industry vets, led by Slow Food Movement pioneer and Executive Chef Nicole Brisson, asked us to put a sustainable spin on Sin City. First we gasped—Slow Food on The Strip?!—and then said ‘yes’ real quick.
Tasked with coming up with a concept that captured the time-honored slow food movement of Italy—an uplifting escape served with ceremony and best enjoyed while lingering—we created Brezza (“breeze” in Italian). With a sprinkle of smart strategy, a dash of delicious copy and a heaping of distinctive design, we nailed the recipe, proving slow and sustainable isn’t a desert mirage.
